Gluten Free Apple Pie

Ingredients
Apple Filling:
- 3 tbsp ghee
- 5 apples , peeled, cored and diced
- 1/4 cup packed brown sugar
- 2 tbsp granulated sugar
- 2 tbsp lemon juice
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 4 tsp cornstarch
Topping:
- 1/2 cup gluten free all-purpose flour all purpose flour
- 1/2 cup packed brown sugar
- pinch ground cinnamon cinnamon
- 1/4 cup ghee , melted

Instructions
- Apple Filling: Preheat oven to 375°F. Heat ghee in large skillet set over medium heat; cook apples, brown sugar, granulated sugar, lemon juice, vanilla, cinnamon and nutmeg for 10 to 12 minutes or until apples are tender. Sprinkle with cornstarch; cook for 1 to 2 minutes or until filling is thickened. Let cool slightly.
- Topping: Stir together flour, brown sugar and cinnamon. Toss with ghee until well combined.
- Crust: Spoon filling into crust; smooth top. Sprinkle evenly with topping. Bake for 20 to 30 minutes or until topping is golden brown and filling is hot and bubbling. Let cool.
Tip: Use baking apples, such as Crispin, Golden Delicious, Cortland, Idared, Jonagold or Granny Smith.
- 1 package of KA–ME® Original Rice Crackers or KA–ME® Seaweed Rice Crackers
- 1/2 cup chickpea hummus
- 1/2 cup beetroot hummus
- 1 small sweet potato , thinly sliced
- 1 medium beet , thinly sliced
- 1 medium carrot , thinly sliced
- 1/4 cup edamame , shelled
- 1/4 cup cranberries
- 1/4 cup yellow corn
- 1/2 cup heirloom cherry tomatoes
- Bring a pot of water to a boil. Once boiling, carefully add eggs. Boil for 7 minutes and then remove, placing in an ice bath. Set aside.
- Cook the KA•ME® Wide Lo Mein Noodles per the package directions. Drain and rinse with cold water and set aside to chill.
- In a medium bowl, whisk all the ingredients in the sauce together. Toss the noodles with the sauce.
- Divide each serving into a bowl. Top each bowl with chopped peanuts, green onions, carrots and cucumbers, and half an egg. Serve cold.
